Style: The intent of this wine was to present Cabernet Sauvignon in its purest form, harvested at a phenolic stage that emphasises the variety’s distinctive herbal characters alongside dark-fruited intensity. A cool and wet growing season further shaped the wine, resulting in an expression of elegance and restraint, lighter in body with aromatic concentration.
Vineyard: A supreme site that demonstrates the complexity and elegance delivered by cool-climate viticulture. The vineyard is certified organic and contains 30- to 35-year-old vines grown on red soils of schist, quartz and iron-rich clay.
Winemaking: The fruit was harvested by hand at first light in late March and immediately destemmed. The must underwent a 48-hour cold soak prior to fermentation. Fermentation proceeded over 11 days, with temperatures remaining below 24°C to preserve aromatics and manage extraction.
The wine matured in oak barrels on lees for 30 months, with its first racking taking place prior to bottling. It was bottled unfined and unfiltered, with minimal sulphur additions.
