At 280m above sea level, the vineyard is distinctly cool, organically farmed and planted exclusively to Pinot Noir. The vines grow on brown clay-loam soils, with water sourced from the pristine Little River, a mountain stream originating deep within the surrounding forest. Spanning just under 10 acres, all vineyard work is carried out by hand, from pruning through to harvest.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003e\u003cem\u003e\u003cstrong\u003e\u003cspan style=\"font-size: 14.0pt; line-height: 115%;\"\u003eWinemaking:\u003c\/span\u003e\u003c\/strong\u003e\u003c\/em\u003e Fruit was harvested by hand and processed in two separate parcels. Fifty percent of the fruit was destemmed, while the remaining fifty percent was retained as whole bunches and gently foot-treaded. Each parcel was fermented separately to preserve its individual character. Both parcels underwent a three-day cold soak, followed by approximately ten days of fermentation – beginning cool, with a brief peak at 28°C and a further week of post-ferment maceration on skins. The wine was basket-pressed directly to French oak with gross lees, where it matured for 16 months. Following élevage, the wine was gently racked to tank prior to bottling.
